What a year! Christmas is around the corner and starting today everyday office life will be at rest for a few days. It’s about time to cast away your laptops and dedicate to the people around you that may have missed out on you a little in these past 12 months. As anticipation is the greatest joy, we happily put together a playlist, that you can listen while driving home for Christmas or while preparing for the big festivities at your place. Thus, it shall sound softly in the background, while we wish you a Merry Christmas, dearest readers! And thank you, thank you, thank you for this wonderful year. 

And as a little gift suggestion, shortly before New Year’s Eve, here’s our ultimate vegan fortune cookie recipe:

Vegan Fortune Cookies

  • 150g wholemeal flour (for a gluten-free version take 50% cornflour and 50% buckwheat flour)
  • 200g brown sugar (I also like to use coconut sugar, and sometimes a smaller quantity – of course, it’s up to you)
  • 60g coconut oil + 4 tablespoons of water
  • 50g ground almonds
  • vanilla extract
  • 1 egg replacer (chia ”egg” or flax seed ”egg” for example)
  • a pinch of salt
  • 2 tablespoons of lemon juice and and a bit of lemon zest

Direction:

  1. Prepare little personalized notes and cut the paper into equal segments. Of course, there’s also the option of preparing them on a computer and printing them out later. Mind the size of your notes (ca. 1,5cm x 10cm).
  2. Cut baking paper into 12cm x 12cm squares. Then draw circles with a diameter of 8 cm.
  3. Mix salt, sugar and liquid coconut oil and stir. Then add your flour of choice and the ground almonds. Add 4 tablespoons of water, and create a batter that smooths down easily (the consistency should be a bit thicker than waffle batter). If needed, feel free to add some water.
  4. Preheat the oven (200 °C / 390 °F with static upper and lower heat or about. 165 ° C / 330 ° F with a convection oven)
  5. Spread about one tablespoon of batter onto the baking paper, right up to the borders of your circle (as evenly as possible, ca. 1-1.5mm of thickness). Do not bake more than 2-3 cookies per person at once, as they have to be formed quickly when they come out of the oven.
  6. Bake the pieces of batter in the middle of the oven, for approximately 4-5 minutes, just until the edges of your cookie are slightly browned. Possibly adjust baking time and temperature to your oven.
  7. After taking the metal sheet from the oven, the fortune cookies must be brought into shape as quickly as possible – otherwise they’ll solidify. To shape the cookies you fold the dough into a semicircle and make sure not to fold at the inflexion, otherwise the dough might break apart. Afterwards band the cookie over on the edge of a bowl or mug, to get that typical fortune cookie shape. Wait a few minutes for the cookie to solidify and put them in a muffin form, to keep them in perfect shape.
  8. Fold, eat, repeat – and there you have it!
